How to Cook (Fool-Proof)
Thaw:
Best: fridge thaw 12–24 h (in tray to catch juices).
Faster: sealed bag in cold water 30–45 min per 500 g, change water every 30 min.
Season:
Generous kosher salt + cracked black pepper.
Optional: garlic, rosemary, a knob of butter at the finish.
Option A — Reverse-Sear (Most Reliable):
Oven 120 °C (250 °F). Bake to 48–50 °C (118–122 °F) internal.
Rest 5 min.
Cast-iron on high: 1–2 min per side for that deep crust.
Finish with butter baste, garlic & herbs.
Target doneness after carryover: Medium-rare 54–56 °C (130–133 °F); Medium 58–60 °C (136–140 °F).
Option B — Grill:
Sear over high heat 3–4 min/side.
Move to indirect heat until target temp (see above).
Rest 5–10 min before slicing against the grain.
